Turmeric Rice, Peas and Chicken

This meal is not only delicious, but is quite a balanced meal;what with the protein in form of chicken, veggies in form of peas and carrot and carbs in form of rice. It is a meal designed for the entire family. Well,  Lets get started!

Ingredients

Chicken Ingredients:

8 to 12 pieces chicken

3 tablespoons cooking oil

1 large onion, sliced

1 tablespoon ginger garlic paste

3 tomatoes, blended

1 tablespoon tomato paste

1 teaspoon curry powder

1 teaspoon turmeric powder

1 teaspoon cumin coriander powder

1 teaspoon paprika

Salt to taste

Turmeric Rice Ingredients

2 cups rice, soaked for 20 minutes and drained

4 cups cold water

1 tablespoon turmeric powder

6 tablespoons cooking oil

Salt to taste

Peas Ingredients

1 cup cooked peas

1/2 cup cubed carrots

1 onion, chopped

2 tablespoons cooking oil

Salt to taste

Recipe

Chicken Curry

Fry your onions in a large pot with the vegetable oil

Add in  the garlic ginger paste and fry till fragrant

Add in the chicken pieces and keep turning for about 3 minutes

Now add in the blended tomatoes and tomato paste

Stir in the spices(turmeric, curry powder, cumin coriander powder, paprika and salt)

Let simmer for about 10 minutes or until ready.

For the Turmeric rice

Place your oil in a large pan

Add in your drained rice and stir until the rice grains are glistening with oil

Pour in the cold water, turmeric and salt

Cover and cook on medium heat until ready.

For the Peas

Fry your onions in oil until just transparent

Add in the peas and carrots and salt to taste

Ádd just a little water or stock to let cook without sticking or burning.

Duration will depend with how crunchy you want your veggies.

However, if you blanched your peas and carrots in hot water, then 3 minutes are enough.
