Githeri is a  Kenyan dish, commonly associated with the Central part of Kenya, but is widely eaten in  most Kenyan communities;

What really makes the Githeri is the maize and beans, but you can add your veggies and spices of choice as you wish.

The best is, it is a whole meal full of nutrients and fibre and is a matter of fact a very healthy meal. Lets get started!




3 cups, boiled green maize and beans

1 cup stock(beef or chicken) or water

1 large onion, diced

3 tomatoes, blended

1 tablespoon garlic ginger paste

1 green bell pepper (Hoho), diced

2 carrots, cubed

4 large potatoes, cubed and parboiled for about 8 minutes(they should still be a little hard)

4 tablespoons, cooking oil

1 tablespoon tomato paste

1 teaspoon, curry powder

Half teaspoon, turmeric powder

1 teaspoon, cumin and coriander

Half teaspoon paprika powder

Salt to taste


Put your oil in a pan, and fry your onions till golden

Add in the garlic ginger paste and fry till just fragrant

Add in your carrots and green pepper

Pour in your blended tomatoes

Add in your salt and spices(paprika,curry powder,cumin coriander and turmeric powder)

Stir in your tomato paste

Stir in your boiled maize and beans.

Finally, add in your pre-boiled potatoes and carefully stir

Add in your stock or water and let simmer for about 7 minutes.

Serve and enjoy!
