Chicken Biryani

Biryani is a savory, flavorful and delicious meal, a delicate blend of rice, meat of choice and spices. Indulge!

500 grams chicken, cut to pieces

2 cups uncooked rice, soaked and drained

Whole spices(cardamom, cinnamon,cloves-2 for each)

4 cups cold water(for the rice)

2 large onions, thinly sliced

3 large tomatoes, blended

1 tablespoon, garlic ginger paste

5 tablespoons, vegetable oil

1 tablespoon tomato paste

1/2 cup unsweetened yoghurt/mala

1 tablespoon Pilau Masala or Biryani Masala

1 teaspoon cumin-coriander powder(dhana jeera)

1 teaspoon turmeric

Half a teaspoon chilli(optional)

Salt to taste

Half a teaspoon yellow food color, mixed in a 1/4 cup cold water


In a large pan, fry your onions until golden brown

Remove the onions and set aside

Add in your garlic ginger paste and chicken pieces and fry for about a minute

Add in the blended tomatoes and tomato paste

Stir in your spices(Pilau masala,Turmeric,Cumin coriander, Salt and Chilli powder)

Stir in the yogurt.

Now, Add in half of the fried onions, Cover and let cook on low to medium heat.

Meanwhile, cook your rice in a pan by adding 4 cups of cold water, salt and the whole spices and cover.

Let the rice cook until done but not overly done.

Once both the rice and chicken are done, In a large oiled pan(to prevent sticking), place a layer of rice(use half the rice) and cover it up with the chicken sauce.

Finish with a layer of rice, and sprinkle the remaining fried onions.

Finally, sprinkle the food colour mix, randomly on the rice.

Cook for about 10 minutes on very low heat or in an oven at 180 degrees celsius/350 fahreinheit.
