Carrot and Raisin Muffins

This recipe makes about 6 of the yummiest muffins I know. It makes one of my favorite cake recipes.


2 eggs

3/4 cup vegetable oil

1 cup sugar

1 teaspoon vanilla

1 cup all purpose flour

2 teaspoons baking powder

1 cup grated carrots

2 tablespoons raisins or mixed dried fruit


Preheat your oven to 180 degrees Celsius (350 Fahrenheit)

Grease your muffin tin.

In a bowl mix in your eggs, oil,sugar,vanilla, flour and baking powder.

Mix in your grated carrots.

In a separate tin, dust your mixed fruit or raisins with a little flour. This prevents them from sinking to the bottom of your muffins.

Add the raisins to your cake mix.

Scoop the mixture into your muffin tin.

Bake for about 45 minutes.

Let cool, Serve and enjoy!
