Chicken Pilau

It is never a complete Kenyan blog without a Pilau recipe! This rice dish is delicious fragrant and flavorful. Indulge!



8 chicken pieces

1 large onion, sliced

2 cups rice, soaked for 20 minutes and drained

4 cups water or chicken stock

1 tablespoon garlic ginger paste

2 tablespoon ground Pilau masala

3 whole cardamom seeds

3 clove seeds

1 tablespoon tomato paste

1 cinammon stick

Salt to taste


Put your oil in a large skillet, add your onions and fry till very dark brown

Add in your garlic ginger paste and whole spices(cardamom,cinnamon,cloves) and fry till fragrant

Add in your chicken pieces and fry

Add in your rice and stir

Add in your water or stock

Add in your Pilau masala, salt and tomato paste and stir

Cover and let boil till dry.

Serve and Enjoy your Pilau with Kachumbari(onion-tomato salad) or as you wish.
