Here is a great recipe that combines all the goodness!
- 2 cups boiled Cow peas
- 1 onion,chopped
- 2 large tomatoes,blended
- 1 tablespoon, garlic-ginger paste
- 1 tablespoon cooking oil
- 1 tablespoon, tomato paste
- 1 cup, groundnuts
- 2 cups water
- salt to taste
To prepare your groundnut sauce, place your groundnuts in a grinder and grind for 30 seconds(it will have a coarse texture)
Transfer the groundnut powder to your blender and add the 2 cups water, blend till it forms a thick paste.
Put your cooking oil in a pan on your source of heat, and add in your chopped onions, saute till transparent.
Add in your garlic ginger paste, and fry till fragrant.
Pour in your blended tomatoes
Stir in the tomato paste and salt.
Now stir in your ground nut sauce
Finally, add in your pre boiled cow peas and stir.
Let simmer on low heat for 15 minutes.
Serve and enjoy.
